Grilled Boneless Chicken Thighs
Ingredients:
12 ea Fresh boneless chicken thighs
1 1/2 C Spice Union Barbeque Spice Rub
2 Tbsp Olive oil

Preheat your gas/charcoal grill or smoker to 400°F, setting up for indirect grilling.

Trim any excess fat from each chicken thigh using a sharp knife.

Place the chicken into a large bowl and add the olive oil. Toss to coat the chicken.

Liberally add the Spice Union Barbeque Spice Rub to the chicken and toss to coat.

Place chicken thighs on the grill/smoker- over the hottest part of the grill.

Cook the chicken thighs for just one minute per side over the direct heat, then move to the cooler side of the grill.

Cook the chicken thighs until they reach an internal temperature of 170°F.

If you choose to add a barbeque sauce to the chicken thighs at the end of the cooking process, you should apply it when the thighs reach an internal temperature of 160°F and re-apply at 165°F. This will ensure a proper glazing and adhesion of the sauce to the chicken thighs.
