Classic Maryland Crab Boil
Ingredients:
2 ea 12 ounce bottles of IPA (India pale ale)
2 ea Vidalia onions- quartered
2 ea Lemons- quartered
1 ea Garlic head- cut in half, exposing the garlic bulbs
3/4 C Spice Union Chesapeake Bay Spice Blend
48 ea Maryland Blue Crab- rinsed
2 Tbsp Sea salt
1/2 C Clarified Butter

In a large stockpot, combine the beer, onions, lemons, garlic and 1/4 Cup of Spice Union Chesapeake Bay Spice Blend; bring to a boil.

Add the Maryland Blue Crabs to the pot.

Cook until the crabs are bright red and the meat is flaky (about 12 minutes).

In a large sieve, drain the crabs and discard the onion, garlic and lemons.

With the crabs still in the sieve, sprinkle the crabs with the remaining Spice Union Chesapeake Bay Spice Blend and the sea salt. Toss to coat.

Line your dining table with about 4 layers of newspaper or paper bags and top with a tablecloth.

Spread out the crabs on the table cloth.

Serve with clarified butter, a great IPA and plenty of damp towels.
