Smoked Scallops with Thyme Butter
Ingredients:
2 lbs Fresh Sea scallops
1/2 C Spice Union Chesapeake Bay Spice Blend
3/4 C White wine
1 oz Fresh lemon juice
2 Tbsp Fresh Thyme- minced
1 Tbsp Garlic- minced
1 Stk Cold butter- cut into 8 pieces
2 Tbsp Fresh Parsley- minced
Salt
Pepper
Smoking the scallops:

Liberally season the scallops with Spice Union Chesapeake Bay Spice Blend.

Place the scallops on the smoker, making sure to leave a gap between each scallop.

Set your smoker temperature to 150°F.

Smoke the scallops for 90-100 minutes.

Keep a close eye on the smoker temperature, as you want to impart smoke upon the scallops, but not cook them.

Once the scallops have reached the desired smoke coloring, remove from the smoker and set the scallops aside.
Cook the scallops:

Preheat a large cast iron pan to medium heat.

Add 1 Tbsp of butter to the pan and heat until the butter starts foaming.

Add the scallops to the pan.

Cook the scallops for about 1 minute per side and remove from the pan.

Add the wine, lemon juice, thyme, and garlic to the pan. Reduce until almost gone.

Remove the pan from the heat and swirl in the remaining butter, one piece at a time.

When you add in the last piece of butter, also add in the parsley and a pinch of salt and pepper.

Return the scallops to the pan and toss to coat.

Serve immediately with sauce spooned over the scallops.
