Pan Roasted Chicken Breast with Almonds and Pan Jus
Ingredients:
8 ea 3-4 oz portions of boneless, skinless breast of chicken
1/2 C Spice Union Garam Masala Spice Blend
3 Tbsp Coconut oil
1/2 C Chicken stock
1/4 C Dry white wine
2 Tbsp Cold butter
4 Tbsp Sliced almonds- toasted

Preheat a cast iron pan on medium heat.

Preheat an oven to 350°F.

Liberally season both sides of the chicken breasts with Spice Union's Garam Masala Spice Blend.

Add coconut oil and butter to the pan.

Place the chicken breasts into the cast iron pan.

Sear the chicken breasts for about 4 minutes per side or until properly browned.

Add the chicken stock and white wine to the cast iron pan.

Place the cast iron pan into the oven and cook chicken for 4-5 minutes or until it reaches an internal temperature of 160°F.

Remove the chicken breasts from the cast iron pan.

Swirl in the cold butter and almonds to the juices remaining in the cast iron pan.

Plate the chicken breasts over your favorite vegetables and top with the pan dripping sauce.

Garnish with toasted almonds.
