Roast Prime Rib of Beef
Ingredients:
1 ea 7 lb Fresh Prime Rib of Beef
2/3 C Spice Union Grilln’ & Roastn’ Spice Blend
2 Tbsp Olive Oil

Bring the prime rib to room temperature.

Preheat your oven to 400°F.

Remove the prime rib from the package and pat dry with paper towels.

Rub the entire prime rib with the olive oil.

Season all sides of the prime rib with Spice Union Grilln’ & Roastn’ Spice Blend.

Place a roasting rack into a large roasting pan and set the prime rib into the roasting rack.

Place the roasting pan into the oven and cook for 25 minutes at 400°F.

After the initial 25 minutes of cooking, lower the oven temperature to 275°F.

Continue to roast the prime rib for approximately 2 1/2 hours or until it reaches an internal temperature of 115°F for medium rare or internal temperature of 122°F for medium.

Remove the prime rib from the oven and cover with foil.

Allow the prime rib to rest for 20 minutes before slicing. During this time, the prime rib will continue to cook.

Slice the prime rib across the roast and serve with your signature potatoes and seasonal vegetables.
