Turkey Meatloaf

Ingredients:
1 3/4    lbs            Fresh ground turkey meat

3          Tbsp         Spice Union Grilln’ & Roastn’ Spice Blend

3          Tbsp         Olive oil

3          Tbsp         Milk

2          Tsp           Dijon mustard

2          Tsp           Worchestire sauce

3/4       C              Onion- minced fine

1/4       C              Bread crumbs

1          ea             Egg- beaten

1/3       C              Ketchup

1          C              Colby-jack cheese- grated

  1. Preheat a small sauté pan to medium heat.

  2. Add the olive oil and minced onion to the sauté pan.  Cook the onion until translucent- about 3-4 minutes.

  3. Remove the sauté pan from the heat and cool the onion to room temperature.

  4. In a large bowl, combine the ground turkey, Grilln' & Roastn' Spice Blend, milk, dijon mustard, worchestire sauce, bread crumbs, egg, onion/olive oil mixture and 2 Tbsp of ketchup.

  5. Using your hands, fold all the ingredients together until homogeneously mixed.

  6. Cover the bowl with plastic wrap and allow the meatloaf mixture to rest in the refrigerator for at least 90 minutes.  This will allow the flavors to marry and the meatloaf mixture to tighten as the breadcrumbs absorb liquid from the mix.

  7. Preheat an oven to 350°F.

  8. Line a sheet pan with aluminum foil and spray with vegetable shortening.

  9. With the meatloaf mixture in the bowl, gently gather the mix into an egg shape and roll the mixture into the center of the sheet pan.

  10. Wet your hands with water and gently shape the meatloaf into a rectangle approximately 10 inches x 6 inches.

  11. Cook the meatloaf for 45 minutes at 350°F.

  12. After the initial 45 minutes of cooking time, glaze the top and sides of the meatloaf with the remaining ketchup, return to the oven and lower the oven temperature to 325°F.

  13. Cook the meatloaf for 20 minutes at 325°F.

  14. Spread the colby-jack cheese over the meatloaf and return to the oven for 10 minutes or until the cheese is melted.

  15. Remove the meatloaf from the oven and serve immediately with buttery mashed potatoes and fresh seasonal vegetables.
