Plank Grilled Walleye with Bacon Butter Stuffing
Ingredients:
1 1/2 C Panko bread crumbs
2/3 C Corn Flakes- crushed to the size of rice grains
1 Stick Butter- melted
2 Strips Bacon- cooked and fine diced
1 Tsp Dry thyme leaf
1/2 C Onion- minced
1 Tbsp Fresh garlic- minced
1/3 C Spice Union Grilln' & Roastn' Spice Blend
3 Tbsp Fresh Italian flat leaf parsley- finely minced
1/3 C Milk
8 ea 6oz Fresh Walleye fillets- skin removed
1 ea Fresh lemon- cut into thin slices
4 ea Grilling planks- cherry, apple, alder, cedar or maple
*soaked in water for at least 1 hour
Prepare the stuffing:

Preheat a medium size non-stick sauté pan to medium high heat.

Place 4 Tbsp of butter, thyme and onion into the sauté pan.

Cook the onion until it is translucent.

Add the panko bread crumbs and corn flake crumbs to the sauté pan.

Keeping the bread crumbs moving in the sauté pan, toast the bread crumbs until lightly golden.

Once the bread crumbs are lightly golden, add 1 Tbsp of Spice Union Grilln' & Roastn' Spice Blend, garlic and bacon to the sauté pan. Toss to incorporate.

Remove the bread crumb mixture from the sauté pan and place into a small bowl.

Add the parsley and milk to the bread crumb mixture and stir to incorporate.

Set the stuffing aside until needed.
Prepare the walleye:

Preheat your grill to high heat.

Brush a slick of butter on each grilling plank. This will prevent the fish from sticking to the plank.

Lay each walleye fillet on the cutting board, skin side up.

Place about 1/3 cup of the stuffing on each walleye fillet.

Fold the walleye fillets over to enclose the stuffing within the walleye fillets.

Carefully move the stuffed walleye to the grilling planks (2-3 on each plank). This is easily achieved using a spatula.

Season the walleye fillets with the remaining Spice Union Grilln' & Roastn' Spice Blend.

Drizzle the remaining melted butter over the stuffed walleye fillets.

Lay three slices of lemon on top each walleye fillet.

Place the grilling planks onto the preheated grill.

Grill the walleye for 12-15 minutes on high heat with the grill cover closed.

During this cooking time, use a spray bottle of water to douse any flames that flare up.

Lower the temperature of your grill to medium heat.

Continue to cook the walleye for an additional 10 minutes or until the internal temperature of the walleye reaches 165°F. Again, keeping the grill cover closed as much as possible.

Remove the walleye from the grill and serve immediately with wedges of fresh lemon.
