Oven Dried Tomatoes
Ingredients:
12 ea Fresh plum tomatoes
3/4 C Olive oil
3 Tbsp Spice Union Ultimate Seasoning Blend

Preheat your oven to 225°F.

Trim off the stem end from each plum tomato and split in half lengthwise.

Place the halved plum tomatoes in a large bowl.

Add the 4 Tbsp of olive oil and Spice Union Ultimate Seasoning Blend to the tomatoes. Toss to coat thoroughly.

Line a sheet pan or cookie sheet with parchment paper or brush with a thin coat of olive oil.

Place the plum tomatoes, cut side up on a sheet pan or cookie sheet.

Place the tomatoes in the oven. Cook for 3-4 hours or until the tomatoes are wrinkly and have lost about 30% of their size.

Let the tomatoes cool completely.

Fairly tightly, pack the tomatoes in an airtight container and top off with remaining olive oil.

Use the oven dried tomatoes in pasta, salads, to spread on crostini, blend with butter and herbs to top grilled fish. The uses are endless.
