Roast Chicken with Pan Jus
Ingredients:
1 ea 3 lb Whole Roaster Chicken
1/4 C Spice Union Polynesian Luau Spice Blend
1 C Chicken stock
1/4 C Dry white wine
4 Tbsp Cold butter
2 Tbsp Fresh flat leaf parsley- minced

Preheat a large cast iron pan on medium heat.

Preheat an oven to 350°F.

Liberally season the entire chicken with Spice Union Polynesian Luau Spice Blend.

Place the chicken into the cast iron pan, breast side up.

Place the cast iron pan into the oven and cook the chicken for 50 minutes.

Add 1/2 Cup of the chicken stock to the pan and return the chickens to the oven to cook for an additional 15-25 minutes or until it reaches an internal temperature of 160°F.

Remove the chickens from the pan and set aside to rest for at least 10 minutes.

Add the remaining chicken stock and white wine to the cast iron pan. Put the pan on medium heat and reduce the liquid to 1/3 cup.

Remove the pan from the heat and swirl in the cold butter and parsley to the juices remaining in the cast iron pan.

Split the chickens along the backbone and breastbone.

Plate the chicken over your signature potatoes and seasonal vegetables. Top with the pan dripping sauce.
