Smoked Lollipop Chicken Drummies
Ingredients:
12 ea Fresh chicken drumsticks
3/4 C Spice Union Polynesian Luau Spice Blend
1/2 C Butter- melted

Preheat your smoker to 225°F- setting up for indirect cooking.

Cut around the knuckle end of each drumstick to release the chicken skin from the knuckle.

Using the backside of a boning knife, scrape the flesh and skin of the drumstick down the drumstick bone. This will create a parcel at the 'fat' end of the drumstick.

Wrap the exposed drumstick bones in foil. This will prevent them from charring.

Liberally season each drumstick with Spice Union Polynesian Luau Spice Blend.

Place the drummies on the smoker, standing up.

Smoke the drummies for 60 minutes at 225°F.

After the initial 60 minutes, brush the drummies with the butter; making sure to get some of the butter down into the chicken meat.

Raise the smoker temperature to 350°F and continue to smoke the drummies for an additional 30-40 minutes or until they reach an internal temperature of 170°F.

Serve with a great beer and plenty of napkins.
