
Wild Boar Shoulder Sandwich

Ingredients:
3-4 lb 4 lb Wild boar shoulder
1/2 C Spice Union Smokin’ Piggy Rub
2 Tbsp Coconut oil

Bring the wild boar shoulder to room temperature.

Preheat a large cast iron pan to medium high heat.

Liberally coat the wild boar shoulder with Spice Union Smokin' Piggy Rub.

Heat the coconut oil in the cast iron pan until shimmering.

Place the wild boar shoulder into the cast iron pan and sear all sides, until nicely browned.

Once seared on all sides, remove the wild boar shoulder from the cast iron pan and place it into the slow cooker.

Set the temperature on the slow cooker to 300°F or medium setting.

Cook the wild boar shoulder for 4-5 hours or internal temperature of 185°F (the meat will be fork tender when done).

Remove the wild boar shoulder from the slow cooker and let rest for 20 minutes. Be sure to save any liquid that remains in the slow cooker.

With two forks, shred the wild boar shoulder.

Season the shredded boar shoulder with any remaining Spice Union Smokin' Piggy Rub.

Add any reserved cooking liquid to the shredded boar meat.

Serve the shredded wild boar shoulder on soft rolls with coleslaw, pickled onions and your favorite barbeque sauce.
