Smoked Chicken

Ingredients:
1       ea          3-4 lb Whole Chicken

2       Tbsp       Olive Oil
1/2    C            Spice Union Sweet & Smoky Spice Rub

  1. Preheat your smoker to 325°F- setting up for indirect cooking.

  2. Split the chicken by cutting it along the back bone and laying it flat, skin side up.

  3. Drizzle the olive oil over the chicken skin and rub the oil all over to coat the entire chicken skin.

  4. Liberally season both sides of the chicken with Spice Union Sweet & Smoky Spice Rub.

  5. Place chicken on the indirect heat side of the grill/smoker.

  6. Cook the chicken for about 50-60 minutes or until it reaches an internal temperature of 170°F.

  7. Let the chicken rest for 5-7 minutes before cutting.
