Broiled Halibut with Mango Salsa
Ingredients:
4 ea 6-8 oz portions of Halibut fillets
1/3 C Spice Union Ultimate Seasoning Blend
4 Tbsp Butter- melted
1 Tbsp Olive oil
2 ea Fresh mango- cleaned and medium diced
2 ea Roma tomato- small dice
3 Tbsp Red onion- finely diced
2 Tsp Fresh ginger- grated on a micro-plane
3 Tbsp Fresh chive- minced
3 Tbsp Fresh cilantro- minced
3 Tbsp Olive oil
2 Tsp Fresh lime juice
1 Tsp Salt
1 Tsp Ground black pepper
Prepare the Mango Salsa:

Combine the mango, Roma tomato, onion, ginger, chive, cilantro, olive oil, lime juice, salt and pepper in a stainless steel bowl.

Toss to combine thoroughly.

Place the mango salsa into the refrigerator to sit for at least 3 hours before serving.
Prepare the Halibut:

Arrange your oven rack to about 6 inches from the broiler.

Preheat the oven to 400°F.

Brush an oven proof pan with the olive oil; this will prevent the fish from sticking to the pan.

Season both sides of the Halibut fillets with Spice Union Ultimate Seasoning Blend.

Place the Halibut fillets into the oven proof pan and drizzle the melted butter and lemon juice over the top of each fillet.

Change the setting on your oven to preheat the broiler for 6-7 minutes. Remember to crack the oven door when broiling.

Place the pan of Halibut under the broiler and cook for approximately 7-8 minutes. Keep an eye on the Halibut to make sure it doesn’t get too browned on the top.

If the Halibut starts to brown too much, move the pan to a rack in the middle of the oven and continue to cook in the oven at 400°F.

Serve over your favorite seasonal vegetables and top with the mango salsa.
