Roast Bison Prime Rib
Ingredients:
1 ea 6 lb Fresh Bison Prime Rib
1/2 C Spice Union Wild Game Seasoning Blend
2 Tbsp Olive oil

Bring the Bison prime rib to room temperature.

Preheat your oven to 400°F.

Remove the Bison prime rib from the package and pat dry with paper towels.

Rub the entire Bison prime rib with the olive oil.

Season all sides of the Bison prime rib with Spice Union Wild Game Seasoning Blend.

Place a roasting rack into a large roasting pan and set the Bison prime rib into the roasting rack.

Place the roasting pan into the oven and cook for 25 minutes at 400°F.

After the initial 25 minutes of cooking, lower the oven temperature to 275°F.

Continue to roast the Bison prime rib for approximately 2 1/2 hours or until it reaches an internal temperature of 120°F for medium rare or internal temperature of 125°F for medium.

Remove the Bison prime rib from the oven and cover with foil.

Allow the Bison prime rib to rest for 20 minutes before slicing. During this time, the Bison prime rib will continue to cook.

Slice the Bison prime rib across the roast and serve with you signature potatoes and seasonal vegetables.
