Grilled Wild Boar Tenderloin with Apple Ginger Glaze
Ingredients:
2 ea 1 lb Fresh wild boar tenderloin
3/4 C Apple jelly
2 Tbsp Fresh ginger- grated on a micro plane grater
2 Tbsp Fresh garlic- finely minced
2 Tsp Orange zest
2 Tbsp Olive oil
1/3 C Spice Union Wild Game Seasoning Blend
Prepare the Apple Ginger Glaze:

Combine the apple jelly, ginger, garlic and orange zest in a small sauce pan.

Heat the apple jelly over medium heat until boiling.

Reduce the heat to a simmer and simmer the glaze to reduce to about 1/2 cup of glaze.

Remove the glaze from the pan and allow to cool to room temperature.
Grill the wild boar tenderloin:

Bring the wild boar tenderloins to room temperature.

Preheat your grill to the highest temperature it can reach.

Rub the wild boar tenderloins with olive oil.

Liberally season the wild boar tenderloins with the Spice Union Wild Game Seasoning Blend.

Place the wild boar tenderloins onto the grill, directly over the hottest part of the grill.

Glaze the wild boar tenderloins with the apple glaze.

Sear the wild boar tenderloins on all sides; approximately 3 minutes per side. Each time you turn the tenderloins, glaze with the apple glaze.

Move the wild boar tenderloins to a cooler part of the grill, away from the heat source.

Glaze the wild boar tenderloins again.

Maintaining a grill temperature of 300-325°F, continue to cook the wild boar tenderloins until they reach an internal temperature of 140°F. This will not take long- perhaps 5-6 minutes, depending on your grill temperature.

Remove the wild boar tenderloins from the grill and allow to sit for 4-5 minutes before slicing.
